Vi har spist så mye god og spennende mat på vår reise. Mye inspirasjon også.
I dag laget jeg en kyllingwrap med stekt kyllingbryst, grønnsaker og en deilig peanøtt saus.
Peanøtt saus
4 pers
1.8 dl kokosnøtt melk
65 g grovt peanøttsmør(med biter)
1 ss fiskesaus
1/2 - 1 ss brunt sukker
1 ss Thai rød curry pasta
1 ts most hvitløk
1/2 rød chili, finhakket ( uten frø)
1 ss lime saft
Bland sammen alle ingredienser foruten lime saften i en liten kjele. Kok opp på middels svak varme mens du rører. Ta kjelen fra varmen og hell i lime saften. Smak til. Hell sausen i en serveringsbolle og la den avkjøles noe før servering.

Even though I love cooking I also love going to restaurants and eating good food.
On our holiday we have been eating so much good , new and exciting food. It has given me a lot of inspiration. Todays dinner I made a chicken wrap with a crunchy peanut sauce and vegetables.
Crunchy peanut sauce
4 servings
3/4 cup coconut milk
1/4 cup chunky peanut butter
1 tbsp fish sauce
1/2 - 1 tbsp packed light brown sugar
1 tbsp Thai red curry paste
1 tsp garlic paste
1/2 red chili, finely chopped (seeds removed)
1 tbsp fresh lime juice
Put all ingredients except lime juice in a small saucepan. whisk well. Bring to a simmer over medium- high heat. Stir for a couple of minutes until everything is well
mixed together. Remove from the heat, pour in the lemon juice. Taste and pour into a serving bowl to cool.
