Gresk salat

1 rød løk, i tynne skiver
1 ts tørket oregano
2 ss hvitvinsedikk
8 ss extra virgin oliven olje
4 modne tomater
1 agurk
1 håndfull kalamati oliven
1 håndfull friske oregano blader, hakket
200 g fetaost, grovt hakket
Legg rødløken i en bolle. Strø over tørket oregano. Hell på vinedikk og olivenolje.
Dekk til med plast, sett det tilside for å marineres i ett par timer.
Skjær tomatene grovt, del agurken på langs og skjær i tykke skiver.
Ha tomater og agurk og løkblandingen i en salatbolle. Rør det sammen.
Tilsett frisk oregano, oliven, fetaosten og smak til med salt og pepper.
Bland alt forsiktig sammen sånn at fetaosten ikke går i småbiter. Server

Greek salad is a favorite of mine. Fresh, vibrant with salty feta cheese. I marinade the onions
first and pour that with the marinade over the other ingredients. Then sprinkle over some fresh oregano. Beautiful. I personally do not like olives, so I make it without.
Buy good quality greek feta cheese. Makes all the difference.
Greek salad
4 servings
1 medium red onion, finely sliced
1 tsp dried oregano
2 tbsp white wine vinegar
8 tbsp extra virgin olive oil
4 ripe tomatoes, diced
1 cucumber
A handfull of kalamati olives
A handfull of fresh oregano leaves
7 oz feta cheese, crumbled roughly
Put the onion slices in a bowl. Sprinkle over the dried oregano. Then pour in the vinegar and olive oil. Cover with plastic wrap and set aside to marinade for a couple of hours.
Dice the tomatoes into chunks. Quater the cucumber lenghtwise and slice thickly.
Tip tomatoes and cucumber into a salad bowl, add the onions and mix to combine.
Add the fresh oregano, feta cheese, olives and season with salt and pepper.
Fold everything together, be carefull not to break up the feta to much. Serve
